Chicken Tortilla Soup
Ingredients:
1/4 cup finely chopped onions
1/2 each finely chopped garlic clove
3 teaspoons vegetable oil
2 cups chicken broth
2 tablespoons chopped red bell peppers
1 1/2 teaspoons chili pepper flakes
3/8 teaspoon basil leaves, dried
1/4 teaspoon salt
1/8 teaspoon pepper
7 1/2 ounces tomato puree
1/4 cup vegetable oil
5 each corn tortillas, cut into 1/2" strips
1 cup cooked chicken breast, cut up or shredded
GARNISHES
1/2 avocado, sliced
Monterey Jack cheese
Cook and stir onions and garlic in 2 T oil in 4-quart Dutch oven until onion is tender. Stir in broth, bell pepper, ground red chiles, basil, salt and pepper, and tomato puree. Heat to boiling; reduce heat. Simmer uncovered for 30 minutes. Heat 1/2 cup oil in 10-inch skillet until hot. Cook tortilla strips in oil until light golden brown, 30 to 60 seconds; drain. Divide tortilla strips and chicken among 6 bowls; pour broth over chicken. op with cheese and avocado slices.

Mediterranean Pineapple Pasta Salad
6 ounces canned pineapple chunks, drained
6 ounces cooked and drained cheese tortellini
3 ounces turkey sausages, sliced, cooked and drained
3/8 cup diced red bell peppers
1 1/2 tablespoons chopped parsley
1 1/2 tablespoons olive oil
2 1/4 teaspoons balsamic vinegar
1/4 teaspoon salt
1/8 teaspoon pepper
1. In large bowl, combine pineapple, tortellini, sausage, bell pepper and parsley.
2. Combine remaining ingredients for salad dressing. Add dressing to salad; toss until mixed.
Makes 2 Servings.
Garlic Corn on the Cob
Ingredients:
1/3 teaspoon lemon zest
1/3 clove garlic, minced
2 teaspoons soy sauce
pepper
1 1/3 tablespoons olive oil
6 fresh corn ears, husked
Preparations:
Combine all ingredients and marinate overnight. When ready to grill wrap corn ears in foil and grill for 30 minutes.
Makes 2 Servings.
Chocolate Kiss
Ingredients:
1/2 ounce Creme de Cacao
1/2 ounce Frangelico liqueur
1/2 ounce vodka
6 ounces vanilla ice cream
Preparations:
Combine liquor with 2 scoops of vanilla ice cream, blend with ice and garnish with chocolate sprinkles.
Makes 1 Love Drink.
Passionate Kiss
Ingredients:
1 oz. Southern Comfort
1 oz. peach schnapps
1 oz. raspberry liqueur
Pineapple juice
Preparations:
Add first three ingredients. Fill remainder of glass with pineapple juice. Serve over ice in a highball glass.
Makes 1 Love Drink.
Strawberry Pasta
Ingredients:
1 pint fresh strawberries
1/2 lb. spaghetti
1/4 cup grated Parmesan cheese
2 tablespoons butter
1/4 cup heavy cream
mint sprigs for garnish
Preparations:
1. Purée strawberries in blender. Drain to remove seeds.
2. Cook spaghetti according to package. Drain and toss with cheese.
3. Heat butter and cream in a small saucepan.
4. Place pasta in a sealable container, then add strawberries, followed by the butter sauce.
5. Serve with additional cheese and garnish with mint, if desired.
